Season's Sensation: Pumpkin Bread Cookies With Cinnamon Glaze



   Hi, all. :) Fall is near... though the cold weather may not come soon, at least where I'm at.
So here is my first fall "Season's Sensation". These cookies are kind of bready textured, (probably because of the pumpkin), and if you make them, you'll see the dough looks like bread dough, so don't be alarmed. :P I substituted some a lot of the butter with pumpkin... you can do that, you know. I recently made some brownies that I substituted the eggs with bananas. :) Banana brownies.

So, this fall you can make these Pumpkin Bread Cookies and curl up with some tea or coffee and a book. :)


Someday I want a "photogenic house". Ehem. A house that has nice lighting (not yellowish), and nice backgrounds for food pictures. :)

          Pumpkin Bread Cookies With Cinnamon Glaze

3 1\2 C flour                                                   1 1\4 C canned pumpkin
1 C sugar                                                        2 eggs, lightly beaten
2 tsp. baking soda                                          1\4 C butter, melted
1 tsp. salt                                                        3\4 C greek yogurt (or regular)
1\2 tsp. nutmeg                                              1\2 C roasted, crushed walnuts
2 tsp. cinnamon

Combine first 6 ingredients. In a separate bowl, mix together pumpkin, eggs, butter, and yogurt. Add to dry ingredients. After combining, add the walnuts.
Bake on ungreased cookie sheet at 350 degrees for 14 minutes.

Cinnamon Glaze:

powdered sugar
water
cinnamon

Add about 1\2 C + 2 T p. sugar to 1 T water, + 1 t cinnamon. If it looks too runny or thick, add more sugar or water.
(note: you'll need about double this recipe to glaze all of the cookies. It depends how much you put on. Its easy, so if you need more, just make some up. :) )
