Chickpea and Banana Chocolate Chip Cookies


     Flourless. Gluten Free. Dairy Free. Low Sugar. Peanut Free. Healthy!

 Here is my latest recipe! :) Well, I didn't make up much of it- the bananas are my major change. That's the only sweetener besides the chocolate chips.
 Anyhow, if you are looking for a delicious, healthy cookie recipe, look no further! These have a great texture, and are very chocolaty and yummy. ^__^ Plus they're true to all the claims up there in italics. :)






Chickpea and Banana Chocolate Chip Cookies

15.5 oz. can of chickpeas, drained and rinsed

2 t vanilla

1\2 C + 2 T almond butter (can substitute peanut butter or another nut butter)

1 1\2 banana

1 t baking powder

a pinch of salt (if there's none in almond butter)

1\2 C chocolate chips

Combine all ingredients except chocolate chips in a food processor, until smooth. Scrape edges a few times to make sure everything is well combined. Stir in chocolate chips. Put on a cookie sheet covered with parchment paper with a cookie dough scoop or spoon, and bake at 350 degrees F for 10 minutes. They'll be real soft at first. Enjoy!

Today was a wet, cold Monday. I don't mind rain... Its kind of nice. :)
Yea, so I took some pictures today in the wet coldness, and this one below is one of them. I like it. :)

By the way, that lovely old fashioned candle holder up there in the cookie pictures is one of my latest Goodwill buys. :) And what I used for a candle is rolled up paper, since I don't think there's any candlesticks in this house. :D Creativity makes things work!

  1. Yum...those cookies look so good! I'll have to make some. Do you know how many cups of chickpeas/garbanzo beans are in a can? I have a lot of dry ones I need to use up.

    Well, the original recipe calls for 1 1\4 cups, and there was more than that in the can... I say maybe 1 1\2 cups? I'm sure it doesn't have to be exact.
