Season's Sensation: Pumpkin Bread Cookies With Cinnamon Glaze



   Hi, all. :) Fall is near... though the cold weather may not come soon, at least where I'm at.
So here is my first fall "Season's Sensation". These cookies are kind of bready textured, (probably because of the pumpkin), and if you make them, you'll see the dough looks like bread dough, so don't be alarmed. :P I substituted some a lot of the butter with pumpkin... you can do that, you know. I recently made some brownies that I substituted the eggs with bananas. :) Banana brownies.

So, this fall you can make these Pumpkin Bread Cookies and curl up with some tea or coffee and a book. :)


Someday I want a "photogenic house". Ehem. A house that has nice lighting (not yellowish), and nice backgrounds for food pictures. :)

          Pumpkin Bread Cookies With Cinnamon Glaze

3 1\2 C flour                                                   1 1\4 C canned pumpkin
1 C sugar                                                        2 eggs, lightly beaten
2 tsp. baking soda                                          1\4 C butter, melted
1 tsp. salt                                                        3\4 C greek yogurt (or regular)
1\2 tsp. nutmeg                                              1\2 C roasted, crushed walnuts
2 tsp. cinnamon

Combine first 6 ingredients. In a separate bowl, mix together pumpkin, eggs, butter, and yogurt. Add to dry ingredients. After combining, add the walnuts.
Bake on ungreased cookie sheet at 350 degrees for 14 minutes.

Cinnamon Glaze:

powdered sugar
water
cinnamon

Add about 1\2 C + 2 T p. sugar to 1 T water, + 1 t cinnamon. If it looks too runny or thick, add more sugar or water.
(note: you'll need about double this recipe to glaze all of the cookies. It depends how much you put on. Its easy, so if you need more, just make some up. :) )

A Pixies Picnic

 My latest photo shoot, on this lovely summer day! :) To me, the perfect summer weather, (unless I want to swim :P), is sunny and warm with a cool-ish breeze. You don't get that too often where I live. :)
I pulled some vines out of the roadside ditch and made a wreath. It may look a little weedy sometimes- and try to ignore the holes some insect may have eaten off the leaves. :P What can I say? This is a little pixie, not a fashion model. :) Ha, ha.

My latest photo shoot... which I'm pretty happy with. (: Having lots of props definitely makes things go better- and easier. A lot of the time, its hard for me to think of a good post name, so Girl and Yellow Flowers will have to do. ;)

3 Ingredient Peanut Butter Cookies


         Three Ingredient Peanut Butter Cookies

1 egg, beaten
1 C sugar
1 C peanut Butter
-----------------------
Beat egg and combine with sugar. Add peanut butter.
Place on ungreased cookie sheet and bake at 350 degrees for 18 minutes.

My latest recipe, for you. I saved a picture of these off probably the Taste of Home site, once, (typing the ingredients and all in the name), and I finally tried them recently. They're really good! And really peanut butter-y, which I like, because peanut butter is delicious. (:
So, just an easy, yummy recipe if anyone likes peanut butter cookies. :)

Photo Gallery: Rocky Lake Beach

     Hi, all! (: 
Yesterday I went to the lake with most of my family and we beached the boat, so I got some lovely lake\beach pictures here. The rockiness isn't nice on your feet, but it makes a pretty picture. ;)  
For these first few, I set the camera on "French Style" mode, hence the orang-ish coloring. One of my favorite "special" settings. :)
