Plum and Lemon Cupcakes

      I followed a basic cake recipe to get the essential ingredients right, then added other things to make my own original recipe. (: These may look more like a muffin... but they are very much cupcakes! If you want, you can make a lemon frosting instead of lemon glaze.

                                               Lemon and Plum Cupcakes

               2 1\4 C flour
                     1 1\2 C sugar
                     1 1\2 t baking soda (or baking power; either will work)
                              1 t salt
                     2 eggs
                     1 C plum juice, from canned plums
                     1 stick of butter, melted
                     about 1 T lemon juice
                     1 C almonds, chopped or partially ground
                     Make a lemon glaze or frosting for the top.

             Mix together dry ingredients. In a separate bowl, combine all wet ingredients. Stir both mixtures together; don't overly mix. Fill muffin tins about 1\3 of the way up. Bake at 350 degrees for about 22 minutes. Let cool before glazing or frosting.

note: If you prefer a not so sweet cupcake, then you can cut the sugar because the plum juice has sugar in it too. Or you can just use milk and leave the plum out altogether. (:
